Thiamin is an
essential B vitamin typically found in meat, legumes, grain, yeast, and
wheat germ. Thiamin is utilized by the liver, brain, and other tissues
to synthesize thiamin diphosphate (TDP), the active form of thiamin. TDP
is critical for the metabolism of carbohydrates into energy (ATP) by
serving as a coenzyme for the oxidative decarboxylation of pyruvate and
alpha-ketoglutarate. Also, TDP promotes healthy nerve function since it
is required for the synthesis of acetylcholine. Anti-Thiamin factors
include thiaminases found in raw fish, certain polyphenols (such as
tannic and caffeic acids found in blueberries and brussel sprouts) and
alcohol.
